RECIPE: syn free Chilli beef one pot with tortilla chips

A filling tasty meal that tastes like real comfort food! This is is fast becoming one of my favourites


Lean beef mince
Chilli or chilli powder to taste
1 tsp crushed garlic
1 can chopped tomatoes
1 can refried beans
1/4 can sweet corn
1/2 chopped onion
1/2 chopped peppers
Pinch salt
Pinch pepper
1 tsp cayenne pepper
1 tsp cinnamon
1 beef stock cube
1 tbs Worcestershire sauce
1 pack batchelors beef rice

1) brown mince in pan, add onions and peppers
2) make up batchelors rice as per pack instructions
3) add everything else (including cooked rice) to the pan and simmer for 15 mins

for the tortilla chips
3 dried lasagna sheets

Boil lasagna sheets
Preheat oven to 200c
Spray sheet of grease proof paper with fry light
Lay lasagna sheets on grease proof paper, cut into desired shapes
Bake for 15 mins checking regularly (they can go from underdone to burnt very quickly!!)
Put them in a zip bag and shake some salt onto them

1/2 grapefruit, Apple and satsuma

Snack: banana


Homemade red pepper soup with chicken added
Mullerlight yogurt


Gammon, egg, chips (carrot and potato) beans, onion and mushrooms



Special K chewy (healthy extra b) crumbled into a glass with a weightwatchers toffee ice cream pot (4) 6 giant white choc buttons (3) whipped cream (1) and 10 mini marshmallows (1) and it was delish!!!!!

Food diary: 8th feb

Breakfast: Magic pancakes (actually Syn free this time!) with berries, banana and a muller yogurt


Lunch: left over chicken fried rice and a satsuma


Dinner: italian mince stuffed pepper with cous cous and salad


Snack: weightwatchers caramel mallow (3) Freddo (5) Special K chewy (healthy extra b)

Food diary: 6th feb and a catch up

You might have noticed I’ve been slacking a bit with this blog over the last few days but we’ve had a lot going on.
My husbands nana died last week and it was her funeral yesterday, it was a lovely ceremony for a truly wonderful woman.
We ended the day with a meal out with friends (a good way to end a hard day!) we went to an indian restaurant but I stayed on plan all day, keeping to my syns.

So here’s today’s food diary:

Banana chopped into banana custard Mullerlight, an apple some melon


Chicken, salad and half a mug shot

Snack: options orange hot chocolate (2 syns) and a satsuma


Steak, Peri peri vegetables and spiced wedges


This joyous creation!! Special K dark cho chewy bar (healthy extra b) weightwatchers toffee ice cream pot (4.5) light whipped cream (1) and 15 mini marshmallows (1.5)

Food diary: 2nd and 3rd feb and 2nd weigh day!

I slacked a bit yesterday and forgot to post my diary! It’s a blip in the road that we will drive over and forget about, so today you lucky lucky people get TWO food diaries and an update from the scales!!

2nd feb
Breakfast: grapefruit, satsuma, Mullerlight yogurt

Lunch: chicken salad with fat free french dressing
Banana, melon


Dinner: Cajun spiced chicken, cauliflower rice and roasted veg


Snacks: options hot choc with marshmallows (3) Special K chewy (healthy extra b) Freddo (5)

3rd feb

Grapefruit and melon, satsuma

Snack: Mullerlight yog, banana, Apple


Batchelors low fat chicken and herb super noodles, roasted veg and grilled chicken

Snack: Mullerlight yog, satsuma, Special K chewy (healthy extra b) Freddo (5) options hot choc and marshmallows (3)

8 syns for day

Today was weigh day and I felt soo much better getting on the scales than I did last week, I have been 100% on plan and although haven’t been to the gym as much as I should have i have been making a conscious effort to be more active in my day to day life.
And it showed on the scales with A 5lb loss. It’s not the most any ones lost in a week but im not competing with anyone. As long as the weight is coming off then im a happy bunny!!

Slimming world update and Food diary: 1st feb

January’s over!! Thank god, I didn’t feel like it was ever going to end.
It’s been an eventful month for me, I celebrated my baby’s 1st birthday, he’s started nursery and im back at work after over a year off!
Trying to stay on plan whilst starting back at work and managing the baby has been a bit of a shock to the system but as long as I stay organised and plan my week, im able to handle it.
I do a meal plan every week, this means I know what I need to prepare in the mornings (if im doing something in the slow cooker) and also makes sure im not duplicating meals.
I use the food plan to do a shopping list and then order my shopping online, it’s saves masses of time and stops those impulse chocolate buys at the till!!
So here’s a what I ate yesterday……

Lunch- leftover kfc chicken ( not counting healthy extra b on this as I used one slice of bread for it all on Saturday and counted it as Saturday’s healthy extra, I know this is probably wrong but it’s my logic!!)

Tea- went out and had steak salad with no dressing, steak was grilled but allowing 3 syns just in case there’s anything hidden there

Snack- hot choc (2& hea) marshmallows (1) Special K chewy (heb) weightwatchers ice cream pot (4.5)

Syns: 10.5 total, more than normal but im pleased with myself considering I was out AND TURNED DOWN CAKE!!!

First weigh day being back on plan and my motivation techniques



Yesterday morning was my first weigh day after being back on plan. I was nervous and impatient as i wanted to see results. I have stuck to plan 100% and exercised so i was hoping to see a good loss, even though ‘aunt flo’  (sorry for TMI but she does make an impact on those scales ladies!) has made an unwelcome appearance. I stood on the scales and i was literally shaking (I’m not even exaggerating, you know that feeling you get when you’re a kid, you’ve done something wrong and you’re waiting to get found out, THAT). I had lost 2lbs.

Initially i was disheartened, i was hoping for a bigger loss than that, but when i stopped and thought about it 2lbs is still a loss. And this is only the start of a loooonnnnggggg journey that i have in front of me. Its a journey that i want to do safely and its a journey that once I’ve reached my final destination, i never want to go on again. If that means taking the slow and steady route then so be it!

I have made motivation jars to help me stay on track. I took two baby food jars (cleaned them out first, obvs!)one was empty, one was filled one with 65 little pegs, each peg represents a pound that i have to lose, each pound lost means a peg swapped from the ‘pounds to lose’ jar into the ‘pounds lost’. It helps with motivation as its a visual representation of how far I’ve come.

i have also been using instagram a lot. I show my meals, snack ideas and i look at other peoples profiles for new ideas and inspiration. there are so many slimming world instagrammers you can’t help but feel motivated.

Food diary 27th jan

Sorry it’s late I fell asleep soooo early last night!!
Breakfast: 1/2 grapefruit, grapes, blueberries and satsuma and yogurt

Snack: kale crisps

Lunch: syn free chilli, lettuce leaf wraps, Mullerlight yogurt

Tea: chicken and noodles with stir fry veg

Snack: peanut hifi bar (healthy extra b) options hot choc (2 syns) Freddo (5)
