RECIPE: syn free Chilli beef one pot with tortilla chips

A filling tasty meal that tastes like real comfort food! This is is fast becoming one of my favourites

Ingredients

Lean beef mince
Chilli or chilli powder to taste
1 tsp crushed garlic
1 can chopped tomatoes
1 can refried beans
1/4 can sweet corn
1/2 chopped onion
1/2 chopped peppers
Pinch salt
Pinch pepper
1 tsp cayenne pepper
1 tsp cinnamon
1 beef stock cube
1 tbs Worcestershire sauce
1 pack batchelors beef rice

1) brown mince in pan, add onions and peppers
2) make up batchelors rice as per pack instructions
3) add everything else (including cooked rice) to the pan and simmer for 15 mins

for the tortilla chips
3 dried lasagna sheets

Boil lasagna sheets
Preheat oven to 200c
Spray sheet of grease proof paper with fry light
Lay lasagna sheets on grease proof paper, cut into desired shapes
Bake for 15 mins checking regularly (they can go from underdone to burnt very quickly!!)
Put them in a zip bag and shake some salt onto them

Oops…

I had a week off plan, way way wayyy off plan.
Thought I would throw that out there for everyone, it was a manic week with so much going on so I had a week of enjoying myself and eating everything in sight but am back on track again this week (again!!).

Me and andy went to my favourite ever restaurant for dinner on Valentine’s Day. It’s a Turkish restaurant on manchesters deansgate, I had fish cakes to start and we shared a Turkish mixed grill for our main. Then Mr swift took me to see 50 shades of grey at the cinema, I loved it! Can we just take a second to appreciate the hotness of Jamie Dornan!

Monday I was invited to an overnight stay at the titanic spa with my friend, and I was thoroughly pampered and relaxed, I think it’s safe to say I was destined to be a woman who goes to spas and does lunch, but it was not the right environment to stick to slimming world!!

Then my dad came up to visit and made me a curry that I have been waiting years and years for.

So all in all its been a manic but lovely week however im dreading the results on the scales tonight but il let you know how I get on

Food diary: 6th feb and a catch up

You might have noticed I’ve been slacking a bit with this blog over the last few days but we’ve had a lot going on.
My husbands nana died last week and it was her funeral yesterday, it was a lovely ceremony for a truly wonderful woman.
We ended the day with a meal out with friends (a good way to end a hard day!) we went to an indian restaurant but I stayed on plan all day, keeping to my syns.

So here’s today’s food diary:
Breakfast:

Food diary: 2nd and 3rd feb and 2nd weigh day!

I slacked a bit yesterday and forgot to post my diary! It’s a blip in the road that we will drive over and forget about, so today you lucky lucky people get TWO food diaries and an update from the scales!!

2nd feb
Breakfast: grapefruit, satsuma, Mullerlight yogurt

Lunch: chicken salad with fat free french dressing

Today was weigh day and I felt soo much better getting on the scales than I did last week, I have been 100% on plan and although haven’t been to the gym as much as I should have i have been making a conscious effort to be more active in my day to day life.
And it showed on the scales with A 5lb loss. It’s not the most any ones lost in a week but im not competing with anyone. As long as the weight is coming off then im a happy bunny!!

Slimming world update and Food diary: 1st feb

January’s over!! Thank god, I didn’t feel like it was ever going to end.
It’s been an eventful month for me, I celebrated my baby’s 1st birthday, he’s started nursery and im back at work after over a year off!
Trying to stay on plan whilst starting back at work and managing the baby has been a bit of a shock to the system but as long as I stay organised and plan my week, im able to handle it.
I do a meal plan every week, this means I know what I need to prepare in the mornings (if im doing something in the slow cooker) and also makes sure im not duplicating meals.
I use the food plan to do a shopping list and then order my shopping online, it’s saves masses of time and stops those impulse chocolate buys at the till!!
So here’s a what I ate yesterday……
Breakfast:

Lunch- leftover kfc chicken ( not counting healthy extra b on this as I used one slice of bread for it all on Saturday and counted it as Saturday’s healthy extra, I know this is probably wrong but it’s my logic!!)

Tea- went out and had steak salad with no dressing, steak was grilled but allowing 3 syns just in case there’s anything hidden there

Snack- hot choc (2& hea) marshmallows (1) Special K chewy (heb) weightwatchers ice cream pot (4.5)

Syns: 10.5 total, more than normal but im pleased with myself considering I was out AND TURNED DOWN CAKE!!!

Breakfast: 1/2 grapefruit, melon

Lunch: leftover chicken fried rice

Dinner: Syn free kfc chicken (1/2 HEb), potato and carrot chips, mixed veg

Snack: hot chocolate (2) mini marshmallows (1) hifi rocky road bar (1/2 HEb) weightwatchers ice cream pot (4.5)

Gammon salad with jacket potato (a tiny one) and fat free french dressing (im really enjoying these salads at the mo!)

Snack: banana, satsuma

RECIPE: syn free chicken fried rice

I literally cooked, ate and cleaned up this dish in the time it took for the hubby’s takeaway to turn up! It’s a winner if you’re after a speedy tea.

Handful of cooked shredded chicken
1 pack microwave brown rice
1 bag stir fry veg
1 egg
2 teaspoons chinese 5 spice
1 tablepoon light soy sauce
1 tablepoon dark soy sauce

Spray a wok with fry lite
Add the veg and cook for a few minutes while the rice is microwaving
Add the rice to the wok
Break the egg into the wok and stir continuously to scramble the egg
Add the soy sauces and 5 spice
Add the chicken and continue to stir on the heat until the chicken is cooked through!
It took me about 5 minutes and it was delicious!!
